On A Whim remodels interior for ‘quite a change’

FRANCIS CREEK – Contrary to its name, calculated plans have long been brewing for a remodel of On A Whim Sweet Treats. 

As reported in the Jan. 26, 2026 issue of The Business News, Owner Erin Propson had already begun work on the bakery/coffee shop located at 205 S. Packer Drive in Francis Creek. 

Propson said the remodeling was completed in early May. 

“It’s been great,” she said. “It’s definitely quite a change from what it was, and I am in love with it, to say the least.” 

After opening the bakery in December 2022, Propson said On A Whim has continued to evolve. 

“Everything has changed,” she said. “We have a couple of new things we have been brainstorming that we’re trying to make come to fruition here, so we just kind of keep adding on.” 

Through the years, Propson said the shop has expanded from offering complimentary black coffee to a full array of hot and iced coffee drinks. 

“We ended up slowly adding coffees over the last about two years here, and in the last year it just kind of blew up – our coffees took off to such an extent that the space we had was just not practical,” she said. “We hit that point where we said, ‘We need to make this change.’” 

Describing the building as having “a very awkward shape,” Propson said the remodel allowed her to rearrange On A Whim’s bakery cases, barista area and customer seating for more efficient use of the space. 

She said the work was primarily completed by her “jack of all trades” husband, Jeremy – who she’s nicknamed “The Cheesecake Guy, because he makes all of our cheesecake and cinnamon rolls” – as well as her father. 

The results, Propson said, have been enthusiastically received by On A Whim’s valued staff and customers. 

“We have so much more room to work, which is amazing,” she said. “It has given it a whole new look. We’ve kind of darkened things up a little bit, but it’s really opened everything up.” 

Popular options 

Propson said On A Whim’s success and ability to renovate have largely been supported thanks to a few top-selling treats, such as its peanut squares, cheesecakes, cinnamon rolls and donuts. 

The latter, she said, has earned her a nickname of her own. 

“I had a bunch of factory workers who love our donuts, and they named me The Bougie Donut Lady,” she laughed. “I kind of love that.” 

Pistachio donuts, Propson said, have proved especially popular. 

“I will say that is probably our biggest hit, and the one we generally can’t keep on the shelves long enough,” she said. “It is a special treat, to say the least.” 

For drinks, Propson said On A Whim’s recently added matcha options are “a huge hit,” as are the new scratch-made fruit syrups. 

“If you like your coffees to not taste like coffee, and you want those lattes to be sweet as heck, we’ve got you,” she said. “If you still want to taste that coffee, we’ve also got you.” 

A welcoming space 

With the new renovations and a varied menu, Propson said On A Whim aims to cater to all tastes while making all customers feel welcome, including families. 

“It feels great to be able to be a place where people can feel good about coming to,” she said. 

Propson said the bakery/shop’s familial atmosphere has only been enhanced over the years. 

“I’ve gotten the privilege to hold numerous people’s babies as they’ve grown,” she said. “That’s one of my favorite things – a family comes in and I’ve got to hold their firstborn, and then they’ve got their secondborn, and I just get to celebrate those big milestones. We’ve kind of created a family, and I love that.” 

The warmth is reciprocated, Propson said, with customers understanding when On A Whim is closed so she and Jeremy can devote themselves to their six- and four-year-old children and travel. 

“[Customers] have always supported our family first ideology, that if we wanted to take time to spend with our littles, they’ve always supported us,” she said. 

Propson said On A Whim works to express its gratitude not just via large gestures like the recent remodeling, but through its everyday interactions. 

“We want you to be able to come in and be able to tell us about your day, as well as get a new treat and just make your day a little bit better,” she said.
