PLOVER – Marc Buttera, co-owner of O’so Brewing Co. & Pizzeria in Plover, said the 250-square-foot space that was originally built inside the brewery in 2021 to make pizzas was “no longer cutting it.”
With customers sometimes having to wait 90 minutes for their food, he said something had to be done – and fast.
That’s when Buttera, who co-owns O’so with his wife, Katina, said they turned an underutilized beer museum/conference room inside the 32,000-square-foot brewery (1800 Plover Road) into an expanded pizzeria, complete with a larger, better-functioning kitchen and more seating.
“When we put that little kitchen in originally, we weren’t exactly sure how efficient and long 250 square feet would last us,” he said. “I thought, ‘If we can do 10 grand a month, I’ll be happy with that.’ Now, we’re making 50 grand a month on pizzas.”
Buttera said all the pizzas at O’so – which was first featured by The Business News in its Oct. 14, 2024 issue – are homemade, and the dough is made fresh daily.
He said the beer-infused dough has been a “huge hit with patrons.”
“The dough is something that has really resonated with people,” he said. “We wanted to make the dough with something different than just plain water, and beer is readily available – we’re a brewery. The new space has been packed. I can have nine or 10 employees in there swinging pizzas at one time if I need it.”
Buttera said the pizzeria – named O’so Amore, which opened March 30, 2022, inside the brewery – served 4,240 pizzas, 1,257 appetizers and 1,014 sandwiches in its first year of operation.
Last year, he said, those numbers increased to 16,880 pizzas, 5,393 appetizers and 4,374 sandwiches.
“The first indicator [that prompted a need for more space] was that people were waiting 90 minutes for food – they were getting a little cranky,” he laughed. “There were times on Saturdays when we actually just shut the kitchen right down. We had three hours of pizzas staring at us.”
Buttera said the biggest problem with the old setup was that it wasn’t big enough to add more oven space.
“With the renovations, we added a couple of conveyor ovens,” he said. “Because we wanted to do it right, we also added a dining area for people who don’t necessarily want to sit out in the main brewery – it can get a little crazy when we have 200 or 300 people in there on a weekend. Some people just want to sit in a quiet space and have a soda or a root beer and eat pizza.”
Wanting and needing to cater to all customers, Buttera said renovations included adding booth seating and tables, expanding the pizzeria from a 250-square-foot kitchen to nearly 3,000 square feet with a full dining area and kitchen.
Needing only about six weeks to complete the project, Buttera said Cardinal Home Builders, RJ Rasmussen Plumbing & Heating and Disher Electric were integral partners of the project.
Still giving back
Wanting to use the platform of the brewery to give back, Buttera said a portion of the sale from each Guardian Lager sold will go to worthy Wisconsin veteran causes.
This year, he said $2 for each case and $14 per half barrel sold will be donated to Patriot K9s of Wisconsin – a nonprofit organization dedicated to training and placing service dogs for veterans.
“When visiting Patriot K9s, I saw a bunch of people who were hard-working, regular folks, and I knew if we gave them money, it would be money well spent,” he said.

Though sales of Guardian Lager will help raise money for Patriot K9s, Buttera said O’so’s main fundraiser for the nonprofit is the annual Guardian 5K Run/Walk, scheduled for May 16 in Plover.
The 2025 event, he said, drew close to 580 participants.
“Because we are a smaller brewery, we don’t make a ton of beer, so the Guardian Run/Walk is a very good way to help,” he said. “In total, we’ve raised more than $61,000 for Wisconsin veteran causes, and are on track to raise up to $20,000 more this year.”
